HELLO FELLOW MUSHROOM ENTHUSIASTS

GOLDEN CHANTERELLES AND FRESH LOBSTER MUSHROOMS

The different mushroom seasons are unfolding before us, and fresh Lobster Mushrooms and Chanterelles are beginning to pop up in small quantities, saving the onslaught for later on this month. As soon as the weather cools a bit, we will have a bountiful supply that continues all the way to November or even December.

Golden Chanterelles

Here's an easy recipe we prepared with the Golden Chanterelles, but really, any wild mushrooms on hand and in season are a good fit for this recipe.

Lobster Mushrooms

As mini pumpkins come into season, this recipe using Lobster Mushrooms will be a perfect fit.

FRESH HUCKLEBERRIES HAVE ARRIVED

In the meantime, Fresh Huckleberries are in. They are the high mountain variety from Idaho and Montana. They are plump, large, juicy and mmmmm....... Simply wonderful. They will be available for the next couple of weeks, and then we will be getting them out of Washington. They make a wonderful huckleberry pie, and when you can find them, those pies sell for about $50.00.

 

Maitakes / Hen of the Woods

FRESH, CERTIFIED ORGANIC MAITAKES

It's no wonder we've had no slowdown with the interest in our Certified Organic, absolutely visually stunning Maitakes. Also known as Hen of the Woods, this beauty is available all year long. Raised out of sawdust logs instead of jars, they are of the highest quality we've ever seen. Their beautiful unfolding layers remind you of a cross between a carnation, and a head of cauliflower. At any rate, if you are doing a sauté, cut them close to the very bottom of the stem so you can maintain the beauty and the shape of the mushroom as it comes out of the pan. It's rich, nutty, deep flavor works well with any wild mushroom concept. Here are a couple of our recipes to get you started.

 

Nutritionally speaking, its of course low calorie, and a good source of vitamin D, niacin, selenium, potassium and vitamins B1 and B2, making it a high quality medicinal source for fighting disease.
